It turns out, there’s more to the cacao tree than cocoa beans – and the ancient civilisations of South America figured this out a good 5,000 years before we did. You see, cocoa beans live inside a pod (the cacao fruit) surrounded by a delicious pulp. This pulp used to be collected and then fermented into an alcoholic drink that was used as an offering to the gods in ancient rituals.
Fast forward to today and the pulp is more likely to drain or be tossed away after harvesting the cocoa beans – until some bright sparks decided it was high time to make the most of every pod.
